No-Hassle Nectarine Salsa

100% easy, 100% yum.

Ingredients

  • 2–4 nectarines (or as many as your snackers dictate)
  • 3–4 cilantro leaves per nectarine — more if you love cilantro
  • Squirt of lime juice — fresh or bottled
  • Dash of salt & pepper to taste

Optional: about ¼ of an onion

Food Processor / Chopper / Ninja / Bullet Method

Blend up the cilantro leaves, lime juice, salt & pepper and one nectarine until cilantro is well chopped but still quite visible.

Add in remaining nectarines and onion (if using) and pulse to a coarse chop. This won't take long — stop when it "looks" like salsa to you.

Old-Fashioned Knife and Cutting Board Method

Finely chop cilantro leaves. Put in mixing bowl with lime juice and salt & pepper and give a quick stir.

Chop nectarines and onion (if using) to what you feel appropriate for salsa chunks. Add to bowl and stir to combine.

Enjoy with your favourite chip, over chicken, on tacos... you name it.
